Chilli oleoresin carries two independent specifications — pungency, measured as capsaicinoids, and colour, measured as ASTA. They come from different constituents and they do not move together. We declare both on every batch, alongside residual solvent, so a hot-sauce buyer and a colour buyer can read the same certificate. Sourced from Guntur, the world's largest chilli trading hub.
Heat and colour are separate purchases
Chilli oleoresin is the solvent-extracted concentrate of dried Capsicum fruit, carrying both the capsaicinoids responsible for pungency and the carotenoid pigments responsible for red colour. India is the world's largest chilli producer and Guntur in Andhra Pradesh is the largest trading hub, which makes this one of the few ingredients where Indian origin is the market default rather than a selling point.
The thing to understand before quoting is that heat and colour are independent variables. Capsaicinoid content determines pungency and is expressed in SHU or as a capsaicinoid percentage. ASTA colour value measures the red pigment fraction. Different constituents, different assays, and a material high in one is not necessarily high in the other — that is precisely why paprika oleoresin (colour, effectively no heat) and high-pungency capsicum oleoresin exist as separate products at all.
In practice buyers arrive wanting one of three things: heat for hot sauces, snacks and ready meals; colour with some heat for general seasoning; or very high capsaicinoid concentration for pharmaceutical and speciality use. Those are different grades with different price positions, and a quotation that names only "chilli oleoresin" has not yet specified which.
We declare capsaicinoids by HPLC and ASTA colour separately on every certificate, along with the solvent used and its residual level — the defining control on any solvent-extracted product and the one most often left off a spice oleoresin certificate.
What produces heat and what produces colour
The principal pungent capsaicinoid and the major contributor to measured heat.

Heat grades are quoted on capsaicinoid content, not on the pepper variety, because the same variety yields different concentrations depending on extraction and standardisation. Every grade also declares ASTA colour value, since a buyer choosing on heat still needs to know what the material will do to the colour of their product. Where a grade is standardised to a fixed SHU or ASTA figure, the carrier and its inclusion level are named — a diluted high-strength oleoresin and a naturally lower-strength one behave differently in formulation even at the same nominal figure. *Colour and viscosity vary with grade, carrier and capsaicinoid concentration. Three lines on this specification deserve particular attention. First, capsaicinoids and ASTA colour are reported separately because they arise from unrelated constituents — capsaicinoids give heat, carotenoids give colour — and a single "strength" figure would conceal which you are buying. Second, Sudan dyes are tested and reported as not detected: chilli and paprika products have a documented history of adulteration with these illegal industrial dyes, and testing is a standard expectation rather than an unusual request. Third, residual solvent is the defining control on any solvent-extracted product; we name the solvent used and test every batch by GC, since permitted solvents and limits differ by destination market. Note also that where a grade is standardised to a nominal SHU with a carrier, the carrier and inclusion level are declared — two materials at the same stated SHU can behave differently if one is diluted high-strength oleoresin. A current Certificate of Analysis and MSDS are issued with every batch.
From Guntur pod to declared oleoresin — assayed, screened, documented
Raw Material: Produced from dried Capsicum pods sourced principally from Guntur in Andhra Pradesh, the world's largest chilli trading hub, with Byadgi material used where colour rather than heat is the objective. Incoming pods are assayed for capsaicinoid and colour content before extraction, because both drive the achievable grade and the yield.
Extraction & Testing: Produced at certified facilities in India. Each batch is assayed for total capsaicinoids by HPLC with SHU calculated on a stated basis, and for ASTA colour value. Residual solvent is tested by GC against the named solvent, and Sudan dyes I–IV are screened and reported as not detected. Contaminant testing covers moisture by Karl Fischer, heavy metals by ICP-MS, aflatoxins and ochratoxin A by HPLC-FLD, pesticide residue screening and a full microbiological panel.
Documentation: Every shipment ships against a batch-specific Certificate of Analysis stating capsaicinoids, calculated SHU, ASTA colour, solvent and residual level, Sudan dye result, carrier and inclusion level where applicable, together with an MSDS. Key information for global product registration and labelling
This is the control we would most encourage chilli buyers to insist on, and the reason is historical rather than theoretical. Chilli and paprika products have a documented record of adulteration with Sudan dyes — illegal industrial azo colourants used to enrich the appearance of faded or weak material. Their discovery in chilli products prompted large-scale product withdrawals in Europe and led to sustained import controls on chilli and chilli-derived products from several origins. The practical consequence is that Sudan dye testing on chilli oleoresin is a standard expectation, not a special request, and consignments may be subject to increased official controls at the EU border depending on origin and current listings. We screen and report Sudan I–IV as not detected on every batch, and buyers should confirm their own destination's current control status before shipping.
Every oleoresin is a solvent-extracted product, which makes residual solvent its defining quality control. Permitted extraction solvents and maximum residues are set by the destination market's rules and differ by solvent class. We name the solvent used on every certificate and test each batch by GC. Buyers should confirm the solvent is permitted for their market and application; a supplier who will not name it has made that check impossible. Specific solvent systems can be requested at order.
