Two Independent Specifications

Chilli oleoresin carries two things a buyer might want, and they come from unrelated constituents:

This is why paprika oleoresin exists as a separate product: it is the same genus processed for colour with the heat effectively absent. A material can be intensely pungent and pale, or deeply coloured and mild. Specify both numbers.

How SHU Is Actually Derived

The Scoville scale began as a sensory panel method. Modern practice does not work that way: total capsaicinoids are measured by HPLC and converted to SHU using a stated conversion basis.

So the capsaicinoid percentage is the primary measurement and the SHU number is derived from it. That matters when comparing quotations — a headline SHU whose derivation is not stated cannot be compared reliably with one that is. Ask for the capsaicinoid figure and the conversion basis, not just the Scoville number.

The Carrier Question

Grades standardised to a nominal SHU are generally high-strength oleoresin diluted with a carrier to hit that figure.

Two materials quoted at the same SHU can therefore contain quite different amounts of actual oleoresin, and will differ in viscosity, dispersion behaviour and flavour carry-over. Require the carrier named with its inclusion level. Without it you cannot compare two quotations, and switching supplier at the same nominal SHU can change how your product behaves.

Sudan Dyes: Test For Them

The compliance issue that defines this ingredient.

Sudan dyes are illegal industrial azo colourants with a documented history of use to enrich the appearance of weak or faded chilli material. Their discovery in chilli products prompted large-scale product withdrawals in Europe and led to sustained official import controls on chilli and chilli-derived products from a number of origins.

Practical consequences for a buyer:

Residual Solvent

Every oleoresin is solvent-extracted, which makes residual solvent the defining quality control rather than a footnote.

Permitted solvents and maximum residues are set by the destination market and differ by solvent class. Require the solvent to be named and tested by GC per batch — if it is not named, you cannot check the material against your own market's rules.

Handling

Store cool, dark and tightly closed below 25°C — carotenoid colour fades with light exposure even though pungency is more stable, so poor storage costs colour value first. High-capsaicinoid grades are strongly irritant to skin, eyes and airways; handle with appropriate protection and brief anyone downstream.

What to Require

  1. Total capsaicinoids by HPLC, with the SHU conversion basis stated;
  2. ASTA colour value, reported separately;
  3. Sudan I–IV screening, reported as not detected;
  4. Solvent named and residual level tested by GC;
  5. Carrier named with inclusion level;
  6. Aflatoxins and ochratoxin A, heavy metals by ICP-MS;
  7. Pesticide residues to EU MRL where the destination requires;
  8. Full microbiological panel.
