The grading ladder is simple. Grade A is intact eight-point stars at minimum 9% volatile oil and 88% anethole; Grade B carries some broken points at 7% and 85%; broken and processed material sits lower and goes mainly to grinding and distillation.

But the control that governs this commodity is botanical identity, and it is a safety control rather than a quality one. Illicium anisatum — Japanese star anise — contains anisatin, a potent neurotoxin, and it is not a culinary spice in any tradition.
