Two Species, One Silhouette

Culinary star anise is the dried fruit of Illicium verum. Its flavour is carried almost entirely by anethole — sweet, warm, liquorice-like — at minimum 88% of the volatile oil in premium grades.

Illicium anisatum, Japanese star anise, is a different species in the same genus. It contains anisatin, a potent neurotoxin, and it is not a culinary ingredient in any food tradition — it is used ceremonially and as an incense.

The Asymmetry That Matters

Read that table again with a practical eye and one thing stands out: every distinguishing feature is destroyed by grinding.

Whole stars can be inspected by a trained grader. Powder cannot be inspected at all. Colour matches. Texture tells you nothing. Aroma is the last remaining clue and it is easily masked in a blend.

This is not a theoretical concern. Where contamination incidents have prompted regulatory alerts, the pattern is consistent: the implicated material has typically been ground, brewed or supplied as an infusion rather than sold as whole fruit. Herbal teas and preparations for infants have featured in several of the reported cases — precisely the formats where the consumer has no opportunity to inspect anything.

How Identity Is Actually Confirmed

Three layers, and a serious supplier uses more than one:

  1. Botanical inspection of whole fruit — point morphology, size regularity and aroma. Cheap, fast, and only possible before grinding.
  2. GC profile — the volatile fingerprint of I. verum is anethole-dominant; I. anisatum presents differently. Useful on both whole and ground material.
  3. Targeted analysis for anisatin — the definitive route where a specific concern exists, though not a routine per-lot test in normal trade.

The important structural point is where in the chain the verification happens. Inspection of whole fruit is the cheapest and most reliable control, and it is only available before the material is ground. A powder verified only after grinding has skipped the strongest step.

  5. Raw-material origin stated — China and Vietnam dominate production;
