Onion oleoresin is the solvent-extracted concentrate of dried Allium cepa bulb, used as a savoury base across soups, sauces, seasonings, processed meat and ready meals wherever onion character is wanted without the weight, water and variability of the fresh or dehydrated bulb.
The chemistry is worth understanding because it explains what the product can and cannot be. An intact onion is nearly odourless. Its flavour is created at the moment of cutting, when cell damage brings the enzyme alliinase into contact with sulphur-containing precursors, generating the volatile compounds responsible for onion's pungency — including the lachrymatory factor that makes eyes water.
Those first-formed compounds are unstable. Through drying, heat and extraction they rearrange into a family of organosulphur compounds — dipropyl disulfide, propyl propenyl disulfide and related sulphides — which carry the deeper, cooked-onion character that savoury manufacturing actually wants. That is what an oleoresin delivers: not raw onion sharpness, but the cooked savoury base note.
