Raw or Gelatinised: The Real Decision

More consequential for formulation than phenotype, and more often overlooked.

Gelatinised maca has been heat- and pressure-treated to remove much of its starch:

Two consequences formulators miss. First, do not compare raw and gelatinised on marker percentage — gelatinised reads higher simply because the diluting starch has gone, not because the crop was better. Second, "gelatinised" involves no gelatin; the term refers to starch gelatinisation and the material is vegan-suitable. Explain that on your own pack, because consumers reasonably assume otherwise.

Phenotype Selection — With a Caveat

Market convention associates the phenotypes with positioning:

Treat these as trade convention rather than established fact. They are genuinely used across the market and consumers increasingly recognise them, which is a legitimate marketing reason to follow them. But a brand intending to make a specific claim tied to a phenotype should check the evidence base for that claim rather than inheriting the association.

Note also, from adulteration and authenticity: the analytical control on phenotype is weak. If you pay a premium for red or black, qualify the supplier's segregation practice — the declaration and the supply chain protect you more than the assay does.

The Flavour Advantage

Worth dwelling on, because it is unusual in this ingredient range.

Maca tastes malty and mildly earthy — not bitter, not astringent, not pungent. After bitter melon, gymnema and neem, this is a considerable relief.

Practically, it means maca can go into tasted formats at meaningful doses without a masking battle — smoothie powders, bars, hot beverages, cereals. The malty character actively suits chocolate, cacao, coffee and malted systems.

This is why maca succeeds as a food ingredient rather than only a capsule active, and it is a genuine formulation advantage.

Labelling Considerations

  1. Vitality, hormonal and fertility claims — strict and market-dependent. Get regulatory review, particularly for women's-wellness positioning.
  2. Glucosinolates and the Brassicaceae family — maca is a crucifer, and glucosinolate-containing plants attract specific consideration in some contexts, including thyroid-related guidance in certain markets. A finished-product assessment matter.
  3. Explain "gelatinised" if you use the term. Consumers assume gelatin; the material is vegan-suitable.
  4. Origin claims — if you say "Peruvian maca" on-pack, be able to document it from your batch records.
