Bitter melon is named for the property. The bitterness comes from momordicin and related cucurbitane compounds, and it survives concentration β€” an extract is considerably more intense than the vegetable most people know.

Critically, and unlike fenugreek, there is no de-bittered grade that retains the actives. Fenugreek's bitterness comes largely from sotolone, which can be reduced without stripping the saponins. Bitter melon's bitter compounds are part of the characteristic profile.

So the format decision is binary: either the consumer does not taste it (capsules, tablets, softgels), or bitterness is part of the product proposition (traditional bitter tonic, karela juice). The middle path β€” a pleasant-tasting bitter melon product at a functional dose β€” is not really available, and projects that attempt it tend to end at a dose too low to be meaningful.
