Cinnamon formulation runs backwards from most botanicals. Normally you pick a dose to deliver enough active. With cinnamon you often pick a dose — then discover the species you can use is decided by that dose, because of a compound that does nothing for your product except constrain it. Do that calculation first and the rest of the formulation is straightforward.
Start With Dose, Then Choose the Species
The decision tree for cinnamon is unusual and worth making explicit:
- What is your extract dose per daily serving?
- How long will a consumer take it? Daily and sustained, or occasional?
- Multiply your dose by the batch coumarin figure to get coumarin per day.
- Compare against the tolerable daily intake in your market.
- Only now: Ceylon or Cassia?
The general shape of the answer:

Do the arithmetic on the batch figure, not the species reputation. "Ceylon so it's fine" is not a calculation. Ceylon is low-coumarin, not zero-coumarin, and if your dose is high enough the number still deserves checking. Ask for the measured figure on the CoA and multiply. Then Choose the Standardisation Basis
Independent of species, and frequently confused with it:
- Polyphenols NLT 20% (UV) — for metabolic and glycaemic positioning. Reflects the type-A proanthocyanidin fraction.
- Cinnamaldehyde NLT 5% (HPLC) — where the aromatic principle is the point: flavour, bakery, beverage character.
- Native ratio 10:1 / 20:1 — traditional and Ayurvedic formats.
A Ceylon polyphenol grade and a Ceylon cinnamaldehyde grade are different products at different prices. Specify both axes.
Metabolic and Glycaemic Supplements — the Core Category
- Grade: Ceylon, polyphenols NLT 20%.
- Format: capsules and tablets dominate. Straightforward — no sensory exposure, no thermal step of consequence.
- Watch: this category's whole design intent is daily long-term use, which is precisely why the species question is not optional here. It is the one application where getting it wrong matters most.
- Pairing: commonly stacked with gymnema, berberine, fenugreek and chromium. Multi-botanical stacks multiply your documentation burden — each active needs its own identity and assay line.
Functional Beverages, Shots and Teas
- Grade: cold-water-soluble spray-dried. The standard grade is only partially soluble and will sediment.
- Cinnamon carries flavour whether you want it to or not. Even a polyphenol-standardised grade brings recognisable cinnamon character at functional doses. In a chai or spiced system that is an asset; in a citrus or berry system it fights the profile.
- Watch: cinnamaldehyde is volatile. Hot-fill and open-tank processing will drive off aromatic character, so a beverage that tasted right at bench may taste flat at line. Assess after your actual process, not before it.
Gummies and Chewables
- Grade: depends on whether cinnamon is the flavour or a hidden active. If hidden, expect to work at masking.
- Watch — thermal loss of aroma: gummy depositing applies sustained heat, and volatile cinnamaldehyde escapes. The polyphenol content survives; the flavour does not. If your gummy is meant to taste of cinnamon, budget flavour overage or add a separate flavour system rather than relying on the extract.
- Watch — colour: cinnamon extract contributes brown tones that can muddy bright colour systems.
Bakery, Cereal and Food Fortification
The application where Cassia is usually the right answer — inclusion rates are low, use is intermittent, and the stronger aromatic character is wanted.
- Grade: Cassia, cinnamaldehyde basis.
- Watch: some markets set maximum coumarin levels in specified food categories, notably certain baked goods and cereals. That is a different constraint from the supplement TDI arithmetic and it applies to your finished food. Check the category rules for your market before setting inclusion.
- Watch — baking loss: oven heat drives off volatile aromatics. Bakery formulators routinely over-dose to compensate; that over-dosing also raises coumarin, so the two calculations interact.
Traditional and Ayurvedic Formats
- Grade: native ratio 10:1 / 20:1, on traditional proportion rather than defined active load.
- Watch: a native-ratio extract still carries coumarin at an undeclared level, since it is not the specification basis. If the finished product enters a market with an intake framework, request the coumarin figure anyway.
Two Handling Realities
- The aroma travels. Cinnamon will scent adjacent stock in a shared warehouse. Store away from odour-sensitive materials — this is a genuine and frequently-learned lesson.
- Cinnamaldehyde degrades in poorly sealed drums. It is volatile and oxidation-sensitive. A drum left part-used with a large headspace loses aromatic character over months, even while the polyphenol assay holds. If you buy on the cinnamaldehyde basis, storage discipline is part of your specification.
