Coumarin is the rare case where the most important number on a botanical certificate measures something you do not want. It is not an active, it does not contribute to function, and the only reason to measure it is to know how much you are unavoidably delivering. For an ingredient taken daily over months, that makes it the number your formulation is actually constrained by.
What Coumarin Is
Coumarin is a naturally occurring benzopyrone found in a range of plants — sweet clover, tonka bean, and Cinnamomum bark among them. It has a characteristic sweet, hay-like aroma and contributes to the smell of new-mown grass.
It is also hepatotoxic at sustained high intake. Sensitivity varies between individuals, and the concern is chronic exposure rather than a single large dose. That combination — cumulative, variable between people, and attached to a pleasant everyday food — is why it has attracted regulatory attention rather than being left to consumer judgement.
Why the Species Determines the Answer
Coumarin content in cinnamon bark is a property of the species, not of the processing:

Only the first row is low-coumarin. The other three — collectively the bulk of world cinnamon trade — are the "Cassia" group. This is why a specification saying "cinnamon" without a binomial resolves, by default, to a coumarin-bearing material.
You Cannot Remove It by Processing
This point is worth being firm about because it is occasionally implied otherwise in sales conversations.
Coumarin is present in the raw bark. Ordinary aqueous or hydro-alcoholic extraction carries it through into the extract along with the phenolics and the aromatics. There is no standard processing step in a commercial cinnamon extract that selectively strips it.
So: a low-coumarin cinnamon extract is one made from Ceylon bark. Full stop. The decision is made at raw-material intake, months before your order, and it is why Ceylon carries a genuine cost premium rather than a marketing one.
A practical test of a supplier. Ask: "Can you supply a low-coumarin extract from Cassia bark?" The correct answer is no, with an explanation. A supplier who says yes is either describing a specialised purification you should ask a great many more questions about, or does not understand their own material. Either way you have learned something for free.
The Arithmetic That Actually Matters
Regulators have set a tolerable daily intake for coumarin — a body-weight-scaled figure below which lifelong daily intake is not expected to cause harm — and the EU additionally sets maximum levels in specified foods such as certain baked goods and cereals.
For a supplement formulator the relevant question is not "does my ingredient comply" but "how much coumarin does one day's serving deliver, and what fraction of the tolerable intake does that represent?" That calculation needs three inputs:
- The measured coumarin content of your batch, in ppm or mg/kg — from the CoA, as a figure.
- Your extract dose per daily serving, in mg.
- The tolerable daily intake applying in your market, scaled to a reference body weight.
Multiply the first two to get milligrams of coumarin per day, then compare against the third. If that number is an uncomfortable share of the limit before you have accounted for the consumer's diet — and remember they may also be eating cinnamon — your formulation needs either a lower dose or Ceylon material.
This is why "complies" on a certificate is not adequate. "Complies" answers a question about the ingredient in isolation. It does not let you run the arithmetic above, and the arithmetic above is what your product's safety position rests on. Insist on a figure.
Why Supplements Are Different From Cooking
The common objection is that people have eaten cinnamon for millennia. True, and the pattern of that eating is the point:

Concentration plus daily repetition plus long duration is exactly the exposure profile a chronic-intake limit addresses. The historical-use argument does not transfer.
How Coumarin Is Measured
By HPLC, as a discrete peak quantified against a reference standard. It is a single well-defined compound, so unlike the polyphenol assay there is no class-method ambiguity here — the number is specific and reproducible between competent laboratories.
That specificity has a useful side effect discussed in adulteration and authenticity: because the coumarin level tracks the species so reliably, the coumarin figure doubles as a species check. A claimed-Ceylon extract carrying substantial coumarin has answered the authenticity question without any further testing.
Writing a Cinnamon Specification That Holds
- Name the species by binomial. "Cinnamomum verum J.Presl, bark." Not "Ceylon cinnamon", which is a trade name.
- Require coumarin as a measured figure by HPLC, explicitly rejecting "complies".
- Set a coumarin ceiling appropriate to your dose and market, derived from your own arithmetic.
- State that species and coumarin appear on every batch CoA, not on the initial qualification only.
- Name the standardisation basis and its method separately — polyphenols by UV, or cinnamaldehyde by HPLC.
- Specify bark, excluding leaf material.
When Cassia Is the Right Choice
To be balanced: Cassia is not a bad material. It is genuine cinnamon, more strongly aromatic than Ceylon, considerably cheaper, and entirely appropriate where the exposure profile is different — flavour applications, bakery, beverages, seasoning systems, and low-dose or intermittent-use food products.
The error is not using Cassia. It is using Cassia without knowing you are, in a daily-dose format, because the specification never named a species. That is the gap this article exists to close.
