All three oleoresins are solvent extracts of Capsicum fruit, and suppliers use the names loosely. Commercially they are different products bought on different numbers. Capsicum oleoresin is bought for heat. Paprika oleoresin is bought for colour with as little heat as possible. Chilli oleoresin sits between them, with both figures declared. Specify the wrong one and you pay for a property you don’t need.

Buying Heat: Capsaicinoids and SHU
Heat is measured by HPLC as total capsaicinoids, mainly capsaicin and dihydrocapsaicin. Scoville heat units (SHU) are then calculated from that figure. The conversion factor is not universal, so a quotation that gives SHU without the capsaicinoid percentage and the conversion basis cannot be compared with another. Ask for both. Also ask for the carrier oil and its inclusion level on standardised grades: two oleoresins at the same nominal SHU can carry very different amounts of diluent. Our chilli oleoresin buyer’s guide covers the heat bands in detail.
High-pungency capsicum oleoresin is a strongly irritant material, and handling guidance should ship with the specification. See the capsicum oleoresin page for the handling notes we send.
Buying Colour: Colour Units
Paprika oleoresin is quoted in colour units because the buyer’s calculation is colour delivered per kilo of finished product. A 100,000 CU grade at half the dose does the work of a 50,000 CU grade. Compare quotations on the same colour-value basis and the same carrier. Capsaicin is declared because a paprika colour that brings noticeable heat is the wrong material for most uses. The paprika colour value guide explains the measurement.
The Regulatory Split
In the US, all three oleoresins are GRAS for flavour under 21 CFR 182.20: capsicum and chilli as “capsicum”, paprika as “paprika”. Paprika oleoresin used to colour food is also a colour additive exempt from certification under 21 CFR 73.345, and the label follows its function (see our guide to the US status of spice oleoresins).
In the EU, paprika extract used as a colour is the additive E 160c (paprika extract, capsanthin, capsorubin) and must meet the specification in Regulation (EU) 231/2012. An oleoresin bought for heat is not sold as E 160c.
Testing That Applies to All Three
- Sudan dyes I–IV and other illegal azo colourants, given their documented history in chilli products.
- Residual solvent named and reported by GC against the market’s limit.
- Aflatoxins and ochratoxin A, which matter for chilli-derived material.
- Pesticide residues to the destination market’s maximum residue limits.
Grades and specifications are on our capsicum, chilli and paprika oleoresin pages.
