Clove (Syzygium aromaticum) is the dried, unopened flower bud of a Myrtaceae tree native to the Maluku Islands and now cultivated across Indonesia, Madagascar, Zanzibar, Sri Lanka and southern India. The defining constituent is eugenol, a volatile phenylpropene that typically makes up the great majority of clove's essential-oil fraction and is the reason clove smells and tastes like clove.
