White pepper is not a different plant from black — it is the same berry with the outer skin removed, traditionally by soaking in water for days. That process is what gives white pepper its clean look, its distinctive fermented note, and the reason its microbiological panel, not its piperine, is the control that matters.
Same berry, different process — and a different risk profile
White pepper and black pepper come from the same plant, Piper nigrum. The difference is entirely in the processing. Black pepper is the immature berry dried with its skin on, which darkens and wrinkles. White pepper is the mature berry with the outer pericarp removed, leaving the pale inner seed.
Traditionally the skin is removed by retting — soaking the berries in water for several days until the pericarp softens and can be rubbed away. It is an effective process and it is why white pepper looks the way it does. It is also, unavoidably, a wet fermentation step, and that has two consequences a buyer should price in.
The first is flavour. Retting strips out much of the fruity, floral, resinous top note that lives in the pericarp, leaving the piperine heat more exposed and adding a characteristic fermented, faintly barnyard note that is either the point of white pepper or its drawback, depending on your application. In a white sauce or a light-coloured soup it is exactly right; substituting it for black pepper on flavour grounds alone rarely works.
The second is microbiology, and it is the real reason to read a white pepper specification carefully. A spice that has spent days in water carries a higher microbial load than one dried in the sun with its skin intact. On white pepper, the microbiological panel is the governing control — more than piperine, more than appearance. We test the full panel per lot and declare the process used.
Grading otherwise follows black pepper's logic: bulk density at 550–600 g/L on Grade 1 and light berries limited to 2%, with Cream White as the extra-clean grade where appearance is binding.
What is in the decorticated berry
The pungency principle, at minimum 4–5% by grade. Sits in the seed rather than the skin, so white pepper retains the heat while losing the aromatic top note.
Materially lower than black pepper's, because the pericarp that carries most of the aroma compounds has been removed.
The skin carries the fruity, floral, resinous character. Removing it is what makes white pepper cleaner-tasting and less complex than black.
The retting step contributes a characteristic fermented, faintly barnyard note. Intrinsic to the product, not a defect — but it must suit the application.

The grade names describe appearance; the process behind them describes the risk. Traditional white pepper is water-retted — the berries soak for days until the skin softens and can be rubbed off. This is a property to specify around rather than a scandal — but a buyer who applies their black pepper micro specification to white pepper unchanged, and assumes the same starting point, has misunderstood the product.
