One Plant, Two Fractions

Peppermint leaf contains two commercially relevant fractions with opposite physical properties:

Note that even the analytical methods differ, and for a reason: gas chromatography is the method for volatile compounds, liquid chromatography for non-volatile ones. The choice of method is dictated by the chemistry, which is why "menthol by GC" and "rosmarinic acid by HPLC" are not interchangeable lines on a certificate.

Why Drying Removes Menthol

The central fact.

Menthol is a volatile monoterpene. It evaporates readily at modest temperatures — that is what makes peppermint aromatic, and what allows steam to carry it over in distillation.

Producing a dry extract requires drying: spray drying, vacuum drying, or similar. Every one of those steps preferentially removes volatiles.

So the compound that distillation concentrates into an oil is the same compound that drying strips from a powder. The two processes work in opposite directions on the same molecule.

The consequence for specifications: a dry peppermint leaf extract standardised to menthol 35–55% is not a demanding specification — it is a physically incoherent one. Any powder meeting it is either an oil-loaded carrier (a legitimate but different product) or something other than what it claims. This is why we report menthol on our leaf extract certificate: a low figure is the expected, correct result, and it confirms the product class.

Rosmarinic Acid: A Well-Behaved Marker

After the class assays covered elsewhere in this series, rosmarinic acid is a relief.

That last point is worth pausing on. A good marker for a dry extract must be a compound that survives the process that makes the product. Rosmarinic acid does; menthol does not. The choice of marker is not arbitrary — it follows from the manufacturing route.

The Limitation: It Is a Family Marker

Rosmarinic acid is specific as a measurement and non-specific as an identifier.

It is the principal phenolic acid of the entire Lamiaceae family — named for rosemary, and present in sage, oregano, thyme, tulsi, lemon balm, spearmint and cornmint.

So it cannot distinguish peppermint from:

Closing the Identity Gap

Identity on peppermint rests on fingerprint comparison rather than a single marker:

The Hybrid Complication

Worth understanding as a supply-chain matter.

Mentha × piperita is a sterile hybrid of M. aquatica and M. spicata. It does not set viable seed, so it is propagated vegetatively from cuttings.

Two consequences:

  1. Varietal identity depends on planting-stock provenance, not seed certification — a different control regime from most crops.
  2. Mint fields can drift. Other Mentha species are vigorous and can establish in or beside a peppermint planting, which is one realistic route by which non-peppermint material enters a supply chain without anyone intending it.

The Ash Question

Practical and worth stating, because it causes avoidable rejections.

Mint leaf carries characteristically high total ash — a property of the material rather than evidence of bulking. Applying a generic botanical total-ash limit rejects good peppermint.

The same lesson applies on neem leaf: know which ash figure carries the information before setting a limit.

Writing a Peppermint Specification That Holds

  1. Declare the product class — "dry leaf extract, not essential oil" — as the first line.
  2. Name the species by binomialMentha × piperita L.
  3. Require an identity fingerprint against authentic peppermint reference material.
  4. State rosmarinic acid NLT X% by HPLC on dry basis.
  5. Require menthol reported by GC — a low figure confirms product class.
  6. Limit acid-insoluble ash; treat total ash as characteristic.
  7. Require carriers declared by name and percentage.

Point five inverts the usual logic once again: you want menthol measured and low, not maximised — the same pattern as azadirachtin on neem and coumarin on cinnamon. Three ingredients in this series where the diagnostic compound is one you are not buying.
