The most common mistake: assuming a peppermint leaf extract will deliver mint flavour. It will not — it is mildly minty at best, because the volatile fraction that is mint flavour is largely lost in drying. A brand expecting their peppermint supplement to taste of peppermint will be disappointed unless they add a flavour system or use the oil. Set that expectation before the formulation brief is written, not after the first pilot batch.
