Why: alliinase — the enzyme that converts alliin to allicin — is acid-labile. Stomach acid inactivates it, so an uncoated format substantially under-delivers against its allicin-yield figure. The enteric coat is what makes the yield claim true, as set out in our standardisation guide. If your format cannot be coated, an allicin-yield claim is difficult to defend and aged garlic is the honest route.

The Odour Problem

Garlic's odour is not an impurity — it is the allicin chemistry itself. That has a consequence worth stating plainly:

Odour and allicin activity are coupled. A conventional garlic extract that smells strongly is doing what it should; one that has been deodorised by aggressive means may have had its chemistry damaged along with its smell.

Two legitimate routes to an acceptable format:

  1. Aged garlic (SAC) — the maturation converts reactive sulphur compounds to stable odourless derivatives. Genuinely odourless by chemistry, not by masking.
  2. Enteric coating — the odour issue for consumers is largely about breath and repeat, and delayed release addresses it while preserving the chemistry.

A third route — heavy deodorisation of a conventional extract — should prompt the question of what else the process removed.
