What Is Cinnamon Extract?

Cinnamon extract is a concentrated preparation from the dried inner bark of trees in the genus Cinnamomum (family Lauraceae). Note "bark": cinnamon leaf is a different material with a different profile — more eugenol, far less cinnamaldehyde — and a specification should say bark explicitly.

The bark carries two commercially relevant fractions: the aromatic constituents, dominated by cinnamaldehyde, and the phenolic constituents, including the type-A proanthocyanidins most associated with cinnamon's metabolic positioning. Those two fractions underpin the two standardisation bases in the market.

Decision One: Which Cinnamon?

"Cinnamon" is a trade name covering several species. The commercially important split:

Read the last two rows together. Cassia is most of what trades as "cinnamon", so a specification that does not name a species will normally be filled with Cassia — not through deception, but because that is the default material. If you wanted Ceylon and did not say so, you will receive Cassia at Cassia quality and, quite possibly, be charged accordingly. The problem only surfaces later.

The Coumarin Problem

Coumarin is not an active. It is a limit parameter. That framing is the whole point.

Coumarin is hepatotoxic at sustained high intake, and regulators — the EU most explicitly — have established a tolerable daily intake and set maximum levels in specified foods. Cassia bark contains coumarin at levels that matter when concentrated into an extract and taken daily; Ceylon bark contains only traces.

Why this bites supplements harder than cooking:

The second is precisely the intake pattern a tolerable-daily-intake figure exists to constrain. So the species question is a safety decision for a supplement, and merely a cost-and-flavour decision for a biscuit.

The specification line that matters: "Species: Cinnamomum verum (Ceylon). Coumarin content to be measured by HPLC and stated as a figure on the Certificate of Analysis." Note "stated as a figure" — a CoA saying "coumarin: complies" is useless, because you cannot calculate a per-serving contribution from the word "complies". You Cannot Process Coumarin Out of Cassia

Worth stating plainly because it is occasionally implied otherwise. The coumarin is a constituent of the raw bark. It is not introduced by processing and it is not removed by ordinary extraction — it carries through into the extract.

Therefore a low-coumarin requirement is a Ceylon requirement. It is a raw-material decision taken before extraction begins, and it is exactly why Ceylon material costs more. If you are offered a low-coumarin cinnamon extract at Cassia pricing, ask two questions: which species was the bark, and what is the measured coumarin figure on the sample?

Decision Two: Which Standardisation Basis?

These are different products at different prices. A cinnamaldehyde-standardised extract bought for a metabolic formula is standardised on the wrong fraction; a polyphenol extract bought for flavour will underperform aromatically. Say which you want.

Note also that polyphenols are assayed by UV — a class method with the same method-sensitivity discussed for other polyphenol materials. Ask for the method to be stated, and treat percentages from different suppliers as non-comparable unless the methods match.

Ethylene oxide deserves attention here. Dried bark is a recognised ETO risk category for EU import, and a positive finding means destruction of the consignment rather than a discount. Aflatoxin matters for the same reason it does on any dried plant material stored warm and humid before processing.

A Handling Note

Two practical points that cost money if ignored. First, cinnamon's aroma is penetrating and will transfer to adjacent stock — store it away from odour-sensitive materials. Second, cinnamaldehyde is volatile and oxidation-sensitive, so a poorly sealed drum loses aromatic character over time even while the polyphenol assay holds steady. If you buy on the cinnamaldehyde basis, your storage discipline is part of your specification.
