Cinnamon adulteration has an unusual property: the single most common and most profitable route has a free detector, because the compound that exposes it is one you should already be measuring for safety reasons. If you are testing coumarin — and for a daily-dose product you must — you are most of the way to an authenticity programme without spending anything extra.
Why Cinnamon Is Targeted
Adulteration follows economics: a real price gap, a buyer checking one number, and a seller whose knowledge exceeds the buyer's testing. Cinnamon has an unusually clean version of this because the price gap is between two materials that are both legitimately called cinnamon.
Ceylon (C. verum) commands a genuine premium. Cassia (C. cassia and relatives) is the commodity. As powders and extracts they are similar in appearance, and — critically — a polyphenol assay cannot distinguish them. Neither can a cinnamaldehyde assay, since both species contain it.
So the primary route requires no chemistry at all. It requires only that your specification did not name a species.
Route 1 — Cassia Sold as Ceylon
The dominant issue, and often not framed as adulteration by anyone in the chain. A specification says "cinnamon extract, polyphenols NLT 20%". Cassia meets it. Cassia ships. Everyone is technically satisfied until someone asks about coumarin.
What catches it: the coumarin figure, decisively and cheaply.
Because coumarin content tracks species so reliably — trace in Ceylon, substantial in Cassia — a claimed-Ceylon extract carrying meaningful coumarin has answered the question. There is no plausible innocent explanation, since as covered in our coumarin guide, the compound cannot be introduced or removed by ordinary processing.
The efficiency point: you should be measuring coumarin anyway for the safety arithmetic on any daily-dose cinnamon product. That same measurement is your species verification. One HPLC determination, two purposes — which makes "we didn't test for it" an unusually weak position on this ingredient.
Supporting controls: an explicit binomial on the CoA (which converts a default into a documented claim), TLC identity against authentic C. verum reference material, and HPLC fingerprint comparison, since the two species differ across the whole chromatogram and not only in coumarin.
Route 2 — Leaf Material Milled With Bark
Cinnamon leaf is a genuine commercial material — it yields an essential oil — and it is much cheaper than bark. Milled in with bark it adds weight and passes visual inspection in a dark powder.
But leaf has a materially different profile: far less cinnamaldehyde and considerably more eugenol than bark.
What catches it: the cinnamaldehyde-to-eugenol relationship. A bark extract with depressed cinnamaldehyde and elevated eugenol is carrying leaf. Requiring both to be reported — rather than cinnamaldehyde alone — makes this visible. A "bark only" declaration on the CoA adds the documentary layer.
Route 3 — Spent Bark and Exhausted Marc
Extraction residue, dried, milled, blended back. Retains aroma, which on cinnamon is persuasive because the smell is so recognisable.
What catches it: the polyphenol or cinnamaldehyde assay, since the actives are depleted. As with other botanicals, this is rarely used alone — it is combined with bulking or with a species swap that props the numbers up.
Route 4 — Undeclared Carriers and Bulking
Maltodextrin, starch, rice flour — legitimate when declared, adulteration when not. On cinnamon the informal tells are an unusually pale colour and a muted aroma relative to the stated grade; genuine concentrated cinnamon extract is assertive.
What catches it: total ash and acid-insoluble ash for mineral bulking, a declared-carrier line by name and percentage, and specifying the assay on a dry, carrier-free basis.
Route 5 — Standardisation-Basis Substitution
A specification failure rather than a fraud. A cinnamaldehyde-standardised extract supplied against a polyphenol specification, or a native-ratio extract supplied against either. All are real cinnamon extract; none is the product that was ordered.
What catches it: naming the basis and its method on the purchase order, and checking the CoA against it on receipt. Note that the polyphenol assay is a UV class method with the usual cross-supplier comparability limits, so the method line matters as much as the number.

Practical Steps for a Buyer
- Require coumarin as a measured figure on every batch. Safety parameter and species check in one line — the highest-value requirement on this ingredient.
- Require the binomial, not the trade name. "Ceylon cinnamon" is a marketing term; Cinnamomum verum is a claim.
- Require eugenol alongside cinnamaldehyde to catch leaf.
- Specify "bark only" explicitly.
- Name the standardisation basis and method.
- Third-party verify the first batch with coumarin and species identity in scope — an independent polyphenol assay alone reproduces the blind spot exactly.
- Re-verify on any price movement. If a Ceylon supplier's price suddenly becomes competitive with Cassia, test before celebrating.
