Standardisation is supposed to be the point at which an agricultural product becomes a predictable industrial input. On beetroot the convention does that job for colour and quietly fails to do it for everything else — not because the assay is bad, but because it is measuring a constituent that has no relationship to the reason most buyers are there.
What Betalain Assays Measure
Betalains are the pigment class responsible for beetroot's colour:
- Betacyanins — principally betanin, the red fraction;
- Betaxanthins — principally vulgaxanthin, the yellow fraction.
Total betalains by UV, with betanin quantified by HPLC, is a sound and well-established specification. For a natural colour ingredient it is precisely the right measurement: it predicts colour strength, it tracks stability losses, and it lets a formulator dose to a target shade.
The trouble is only that it has been carried across into applications where colour is incidental.
What the Performance Literature Measures
The research that turned beetroot into a sports category is about dietary nitrate — and specifically about nitrate dose, most often delivered as beetroot juice.
Nitrate is an inorganic anion. It is not a pigment, it is not a polyphenol, and it is entirely colourless. Nothing about the appearance of a beetroot powder indicates how much of it is present.
Betalain content and nitrate content are independent variables. They are influenced by different things — pigment by cultivar, processing temperature and storage; nitrate by soil nitrogen, fertiliser regime, cultivar and season — and they move separately. Neither predicts the other.
Why Nitrate Varies So Much
Nitrate content in beet is one of the more variable figures in the functional-ingredient world, and it is worth understanding why before asking a supplier to guarantee it:
- Soil nitrogen and fertiliser regime — the dominant factor. A well-fertilised crop accumulates more nitrate;
- Cultivar — varieties differ substantially;
- Season and growing conditions — light, temperature and water availability all contribute;
- Maturity at harvest;
- Processing route — juice concentration carries nitrate through; some extraction routes do not.
This is why we declare nitrate per batch rather than specifying a minimum. A supplier publishing one fixed guaranteed figure across all production is either narrowing their raw material dramatically — which is possible, at a price — or reporting a number that is not really being verified each batch.
How Nitrate Is Measured
Two established approaches:

Either is acceptable provided the method is stated. What is not adequate is a colorimetric strip or a calculated figure derived from something else — nitrate should be measured directly on the finished material.
Ask also that nitrite be distinguished from nitrate rather than reported together. They are different anions with different significance, and a combined figure obscures both.

If You Need a Nitrate Floor
Some formulations genuinely need one — a product dosed to deliver a specific nitrate load cannot work on whatever the batch happens to carry.
That is a legitimate requirement and we will quote it, as a screened specification: material selected and tested to meet a stated nitrate minimum. It carries a longer lead time and a higher price, because it means rejecting batches that would otherwise be perfectly good beetroot. We would rather quote that honestly than print a guaranteed figure and hope.
The Stability Asymmetry
One practical consequence of the two constituents being unrelated:
- Betalains degrade with heat, light, oxygen and unfavourable pH. Colour fades in processing and storage;
- Nitrate is stable under the same conditions.
So a powder that has visibly faded has lost colour value while retaining functional value. For a colour application that material is downgraded; for a nitrate application it may be entirely unaffected. Two buyers can look at the same drum and reach opposite conclusions, and both be right.
