Beetroot is one of the few ingredients where a buyer can do everything right on paper — write a specification, check the certificate, verify the assay — and still end up with a material that cannot do the job the product was designed around. The reason is that the industry standardises on one constituent and the science is about a different one.
Two Constituents, Two Stories
Beetroot carries two things a buyer might care about, and they have almost nothing to do with each other.

Betalain content and nitrate content vary independently. A vividly red powder can be low in nitrate; a duller one can be higher. If you are buying beetroot for a nitric-oxide or performance format and selecting on colour or betalain assay, you are selecting on the wrong variable.
Which One Do You Actually Need?
This is the first question, and the answer determines everything else:
- Buying beetroot as a natural colour? Betalain standardisation is exactly right. Nitrate is irrelevant to you. Buy on betalains, and pay attention to pigment stability.
- Buying beetroot for a sports or cardiovascular format? Nitrate is the variable. Betalain content will not tell you what you need to know, and a certificate without a nitrate figure has not told you whether the material works.
- Buying beetroot for a greens blend or whole-food format? You are probably buying the vegetable rather than a fraction, and root powder is likely the right product — but still ask for the nitrate figure so you know what you have.
Three Products, Routinely Confused
"Beetroot powder" is quoted for at least three materially different things:

Note the trap in the right-hand column: a betalain-standardised extract can cost more than a juice powder and deliver less nitrate, because it was optimised for pigment. Paying more does not automatically get you more of what a sports formulation needs.

Ask About the Carrier
Spray-drying a sugar-rich juice generally requires a carrier — maltodextrin most often. That is legitimate and frequently unavoidable.
What is not acceptable is leaving it undeclared, because an undeclared carrier dilutes everything you are buying while the certificate looks unchanged. Require the carrier to be named with its inclusion level. If you need a carrier-free material or a specific carrier for a clean-label position, specify it.
Plan for the Sugar
Beet is a sugar crop. Sucrose dominates the dry matter of root and juice powders, and concentrating juice concentrates sugar along with everything else.
Practically this constrains inclusion rates in low-sugar formats and affects carbohydrate declarations. It is also part of why beetroot shots exist as a format — a small volume carries the dose without carrying an unacceptable sugar load into a larger serving. Ask for total sugars per batch.
Colour Fades. Nitrate Does Not.
Betalains are sensitive to heat, light, oxygen and pH. Colour will fade under thermal processing and over storage — a well-known constraint in natural-colour work.
Nitrate is a stable inorganic anion and does not degrade the same way. This produces a useful and slightly counter-intuitive rule:
A beetroot powder that has faded in storage has not necessarily lost its functional content. Colour loss is a colour problem. Do not infer nitrate loss from appearance — measure it.
The Nitrate Conversation Nobody Starts
One point we would rather raise than leave for a regulatory reviewer to find.
Nitrate is the constituent that makes beetroot commercially interesting, and it is also regulated as a contaminant in other food contexts, with maximum levels set in the EU for certain leafy vegetables and an established toxicological literature on nitrate and nitrite intake.
This does not make beetroot a problem ingredient — it is a widely eaten vegetable, and the performance research uses it precisely because dietary nitrate from vegetables behaves as it does. But it does mean a "maximum nitrate" marketing position is not a straightforwardly good story, and that formulations targeting high daily intakes should put the question in their safety review.
What to Require
- Product form stated — root powder, juice powder or extract, explicitly;
- Dietary nitrate declared for the batch, by ion chromatography or HPLC;
- Betalains by UV, with betanin by HPLC where colour matters;
- Carrier named with inclusion level, or a carrier-free declaration;
- Total sugars per batch;
- Synthetic colour screening — sensible on any deeply pigmented ingredient;
- Heavy metals by ICP-MS, pesticide residues, full microbiological panel.
