Wheatgrass looks like the simplest botanical on a sourcing list β it is grass, dried and milled. In practice it is one of the easiest materials to buy wrongly, because the single word "wheatgrass" covers three different products at three different price points, and most requests for quotation never say which one they mean. This guide covers the format taxonomy that should anchor every wheatgrass purchase, the numbers a genuine CoA must show, and the gluten documentation question that separates serious suppliers from the rest.
What Is Wheatgrass?
Wheatgrass is the young grass of common bread wheat, Triticum aestivum L., harvested at the pre-jointing stage β typically 7 to 14 days after germination, before the stem elongates and before any grain begins to form. At that moment the plant is at peak chlorophyll and micronutrient density: it is functionally a leafy green vegetable, running 20–25% protein on a dry basis with dense vitamin, mineral and flavonoid content. Left another few weeks, the same plant becomes a cereal crop with a fraction of the nutritional profile. Harvest timing, not the species, is what you are actually buying.
The Format Taxonomy: One Name, Three Materials
This is the spine of any competent wheatgrass purchase, because the commercial market genuinely sells three different things under one name:
- Whole-grass powder β the young grass dried and milled, fibre and all. Chlorophyll typically NLT 0.5%. The economical grade for tablets, capsules and fibre-inclusive greens blends.
- Juice powder β the fresh grass cold-pressed, fibre discarded, and the juice dried at low temperature. Chlorophyll typically NLT 1.0%, solubility far better, sensory profile closer to fresh juice β and a price roughly double the whole-grass powder.
- 10:1 concentrated extract β the profile compressed roughly tenfold for low-dose formats where deck space is contested.
These are not quality tiers of one product; they are different materials with different compositions, and each is the right answer for a different formulation. A quotation for "wheatgrass powder, $X/kg" that does not name the format is quoting nothing β and the commonest failure in this category is a buyer specifying juice powder, receiving milled whole grass, and never testing the difference.
Buyer tip: the formats separate analytically, not just on price. Juice powder runs materially higher in chlorophyll and protein and lower in crude fibre than whole-grass powder. If the CoA for a "juice powder" reads like milled grass β chlorophyll under 1%, fibre-heavy β you have your answer before the drum is opened. Chlorophyll: the Number That Does the Work
Wheatgrass has no single pharmacopoeial marker compound, which is why lazy specifications say nothing at all. The working marker is total chlorophyll by UV-Vis spectrophotometry, and it earns its place twice over. Chlorophyll peaks in young grass and declines with maturity, so the assay verifies the pre-jointing harvest claim. And chlorophyll degrades to grey-brown pheophytin under heat, so the assay equally verifies gentle processing. One number, two of the buyer's biggest unknowns closed.
Insist the figure appears on the CoA with its method. "Rich in chlorophyll" is marketing; "total chlorophyll NLT 1.0% w/w by UV-Vis" is a specification.
The Gluten Question, Done Properly
Because wheatgrass comes from wheat, the gluten question arrives with every enquiry β and the correct answer has two halves. Botanically, gluten proteins exist only in the kernel, and pre-jointing grass has no kernel; the plant tissue itself is gluten-free. Practically, cross-contact happens: volunteer grain from a previous crop, seed and hull fragments carried at harvest, shared drying and milling lines. A gluten-free label on your finished product therefore rests on batch-wise ELISA testing below 20 ppm β the recognised threshold in both the EU and US β not on the harvest story.
This is a genuine documentation differentiator. A supplier who provides R5 ELISA results per batch has closed the question; a supplier who answers with the botany lesson alone has not.
