Why Wheatgrass Is a Target

Adulteration concentrates where the quality difference is invisible to the buyer's usual checks. Wheatgrass is an extreme case: the whole market's de facto acceptance test is "is it green, and does the micro pass?" — and every route below survives both. The premium between young pre-jointing grass and mature grass, between juice powder and milled grass, and between clean material and bulked material is exactly the margin an unscrupulous seller captures.

What follows is rarely a fake product. It is real grass, degraded in ways a colour glance cannot see.

Route 1 — Mature Grass Sold as Young Grass

Grass cut after jointing yields several times the biomass of pre-jointing grass — taller plants, more tonnes per acre, a fraction of the cost. Dried and milled, it is still green and still legitimately Triticum aestivum. What it is not is wheatgrass in the commercial sense: chlorophyll, protein and micronutrient density all fall away sharply after jointing while fibre climbs.

What catches it: the chlorophyll assay, directly. Mature grass cannot reach a young-grass chlorophyll figure, and a high crude-fibre profile corroborates. Route 2 — Cheaper Grasses Substituted

Dried and milled, young cereal grasses are nearly indistinguishable by eye: barley grass, oat grass and cheaper field grasses can all stand in for wheatgrass, and sometimes do — occasionally by genuine warehouse confusion, since many suppliers trade all of them. Barley grass is a legitimate material in its own right; it is simply not what the label says, and its flavonoid profile differs.

What catches it: botanical microscopy on the raw material, the flavonoid fingerprint — wheatgrass carries characteristic saponarin/lutonarin-type flavone glycosides — and a correct-species declaration on the CoA that makes substitution a falsification rather than an oversight. Where the stakes justify it, DNA barcoding of incoming raw material settles the question definitively.

Route 3 — Whole-Grass Powder Sold as Juice Powder

The highest-margin route, because it requires no adulterant at all — only a label. Juice powder costs roughly twice what milled grass costs, and most buyers cannot tell them apart in a drum. The materials are analytically distinct, but only if someone looks.

What catches it: composition. Juice powder runs materially higher in chlorophyll and protein and far lower in crude fibre than whole-grass powder, and it disperses toward solution where milled grass sediments. A five-minute glass-of-water test plus the CoA's chlorophyll line will not be argued with.

Specification language that works: "Cold-processed juice powder of Triticum aestivum young grass, fibre fraction removed. Total chlorophyll NLT 1.0% w/w by UV-Vis, on dry basis. Carriers and excipients, if any, declared by name and percentage on the Certificate of Analysis." Every clause in that sentence closes a route on this page.

Route 4 — Undeclared Carriers and Bulking

Maltodextrin is a legitimate, sometimes necessary drying aid for juice powder — spray-drying a sugary juice without a carrier is genuinely difficult. The adulteration is the undeclared version: carrier loadings far beyond process necessity, sold at pure-material prices. Mineral bulking — the crude end of the same trade — adds weight with earth-derived filler.

What catches it: a declared-carrier line on the CoA, forced by your specification; a chlorophyll and protein assay that arithmetic cannot survive — every kilo of maltodextrin dilutes both proportionally; and acid-insoluble ash at NMT 2% for the mineral route, doubly important in a crop cut centimetres above the soil.

Route 5 — Copper Chlorophyllin and Colour Spiking

The sharp end. Tired, pheophytinised or mature material looks the part again with a small addition of sodium copper chlorophyllin — a semi-synthetic, intensely green, water-soluble colourant — or, cruder still, a synthetic green dye. The powder now passes the only test most buyers run: looking at it.

What catches it: chemistry that cannot be painted over. Natural chlorophyll holds magnesium at its porphyrin centre; chlorophyllin holds copper. An ICP-MS copper reading far above the crop-plant baseline is a finished argument, and the full UV-Vis spectrum corroborates — chlorophyllin's absorption profile is shifted from the natural twin-peak a/b signature. An unusually vivid, unusually water-soluble green in a "whole grass" powder is the visual tell that should trigger both checks.

Practical Steps for a Buyer

  1. Anchor the specification on chlorophyll with a method. One line defeats routes 1, 3 and 4 simultaneously.
  2. Ask for copper by ICP-MS on the first lot. Cheap, fast, and the only reliable chlorophyllin control.
  3. Require the format named and carriers declared. Converts the two commonest omissions into falsifications.
  4. Run the glass-of-water test on every sample. Juice powder disperses toward solution; milled grass settles. Thirty seconds, no instrument.
  5. Third-party verify the first batch. Nominate Eurofins, SGS or Intertek for pre-shipment testing on a new supplier, and re-qualify periodically — supply chains drift.
