Garcinia is the rare botanical where an extract can lose potency in storage without its headline assay changing at all. The mass stays put; the chemistry moves. Understanding lactonisation — what it is, what drives it, and why a total-HCA figure hides it — is the difference between a specification that controls this ingredient and one that merely appears to.
The Molecule
(−)-Hydroxycitric acid is citric acid with an added hydroxyl group. Two features of that structure drive everything commercial about the ingredient.
It has stereochemistry
HCA exists as several isomers, and the naturally occurring, functionally relevant form in Garcinia is the (−)-isomer. Other isomers occur in other plants — hibiscus, for instance, carries a different one — and are not equivalent. A well-written specification names the (−)-form.
It readily cyclises
The hydroxyl and carboxyl groups sit in a geometry that allows an internal ring closure, expelling water and forming the lactone. This is the central fact of garcinia chemistry:
- It happens on drying, and accelerates with heat.
- It continues slowly at ambient temperature, faster in humidity.
- The lactone is not considered the active form.
- It is a rearrangement, not a loss — so the mass stays in the sample.
The consequence that catches buyers: because lactonisation is a rearrangement rather than a degradation-to-nothing, a "total HCA" assay that counts both forms together barely changes as material ages. Your certificate still reads 60%. Your free-acid content has fallen. The number that would have told you is the one that was never reported.
Why Salts, and Which Ones
Free HCA is hygroscopic, acidic and lactonisation-prone — a poor commercial powder. Neutralising it to a salt improves stability and handling substantially. Two families dominate.
Calcium-potassium double salts
The most widely used commercial form. Good stability, good flow, well understood on tabletting lines. The trade-off is a substantial mineral load, calcium in particular, and limited water solubility — calcium salts of organic acids are generally poorly soluble, which is exactly why this form is unsuitable for beverages.
Potassium-magnesium salts
Developed largely to solve the solubility problem. Genuinely water-soluble, which makes them the correct choice for drink mixes, sachets, effervescents and RTD formats. Different bulk density and different mineral profile, so a straight swap from Ca-K changes more than solubility.

Note the ash row. Both salts carry high mineral ash by design. A buyer applying a generic botanical ash limit — say NMT 10% — will reject correctly made garcinia. On this ingredient, total ash should be reported, not limited; acid-insoluble ash, which catches soil and mineral bulking, should still carry a limit.
Titration vs HPLC
Titration
Measures total titratable acidity and converts it to an apparent HCA percentage. Cheap, fast, and structurally unable to distinguish HCA from any other acid in the sample. The fruit rind naturally contains citric acid, so titration overstates even on honest material — and it is defenceless against deliberate citric acid addition, as covered in adulteration and authenticity.
HPLC
Separates hydroxycitric acid as a discrete peak, identified by retention time and quantified against a reference standard. Critically, it also resolves the lactone as its own peak — which is the only practical way to get the split that matters. This is the method behind every SV Botanica garcinia certificate.
When two suppliers' figures disagree, establish the methods before drawing conclusions. A titration figure and an HPLC figure are not the same measurement and a discrepancy between them may be entirely expected.
Reading a Garcinia Chromatogram
Three things to look for when a supplier sends you data rather than just a number:
- HCA and lactone as separate, resolved peaks. If the method does not separate them, the reported total is uninformative about active content.
- Citric acid visible and proportionate. Some is natural. A large citric peak against a modest HCA peak is a spiking signature.
- A clean baseline in the acid region. Unexplained peaks in an extract standardised on a single acid deserve a question.
Writing a Garcinia Specification That Holds
- Name the isomer: "(−)-hydroxycitric acid".
- Name the method: "total HCA NLT 60.0% w/w on dry basis, by HPLC". Explicitly exclude titration if you want to be certain.
- Require the split: "free HCA and HCA lactone to be reported separately".
- Set a lactone ceiling: NMT 5% is achievable on well-made, well-stored material and is the line that actually protects you.
- Name the salt form — calcium-potassium or potassium-magnesium.
- Require calcium and potassium reported for your nutrition declaration.
- Report total ash, limit acid-insoluble ash. Getting this backwards rejects good material.
- Specify storage conditions in the purchase terms, not just in the product literature.
Stability Is Part of the Specification
Two practical consequences of lactonisation kinetics that belong in your quality system rather than in a technical appendix:
- Process heat converts your active. Any step applying sustained temperature — tablet drying, gummy depositing, hot-fill — pushes free acid toward lactone. If your label claims HCA content, assay the finished product, not just the incoming material.
- Warehouse heat does the same, slowly. Re-assay free acid, not total, on long-held or hot-stored lots. Re-assaying the total will reassure you incorrectly.
