Spirulina splits into two formulation problems that share nothing. As a nutritional powder the challenge is taste and colour in a blend. As a natural blue colour the challenge is that phycocyanin is a protein — and heat, acid or light will take your expensive blue and turn it grey.

Natural Blue: Know the Limits Before You Design
Phycocyanin is a pigment-protein complex, and proteins denature. Denatured phycocyanin loses colour.

The expensive mistake: specifying a high colour value for an acidic, hot-filled beverage in clear packaging. Every one of those three factors attacks the protein, and the result is a premium ingredient delivering a grey-green product by end of shelf life. If your format is in the "poor" rows, phycocyanin is likely the wrong choice — and a supplier who tells you that is worth more than one who takes the order.
Frozen and Confectionery — Where Blue Works
- Grade: phycocyanin E18, or higher colour value for low inclusion.
- Why it works: cold storage, near-neutral pH, and usually opaque packaging — all three stresses minimised.
- Watch — light in retail display: ice cream cabinets are lit. Opaque packaging matters more than formulators expect.
- Watch — shade: phycocyanin gives a distinctive blue that reads as natural rather than synthetic. Blending toward green or purple with other natural colours is common; bench the combination for differential fading.
Beverages — Proceed With Care
- Grade: phycocyanin, water-soluble.
- Establish pH first. Neutral systems are workable; acidic ones generally are not.
- Avoid hot-fill. If your process requires it, phycocyanin is probably not viable — consider whether the blue is worth redesigning the process for.
- Packaging: opaque or UV-protective. A clear bottle on a lit shelf is a fading experiment.
- Run a real shelf-life study under actual storage and light conditions, not an accelerated one alone — light-driven fading does not always accelerate predictably.
Superfood Powders and Greens Blends
The nutrition side, where the challenges are sensory rather than chemical.
- Grade: spirulina powder, protein NLT 60%.
- Watch — taste: spirulina has a pronounced marine, savoury character that many consumers dislike. In a greens blend it competes with everything else; masking usually relies on fruit acids, sweeteners and stronger flavours such as mint or cacao.
- Watch — colour dominance: spirulina is deep blue-green and will dominate a blend's appearance at modest inclusion. This is often desirable in a greens product and unhelpful elsewhere.
- Watch — dispersion: spirulina disperses rather than dissolving; expect some sediment in a still beverage.
- Pairing: commonly with moringa, wheatgrass and other greens.
Plant Protein and Sports Nutrition
- Grade: spirulina powder, protein-specified.
- Positioning: spirulina is among the most protein-dense ingredients available and suits vegan protein positioning.
- Watch — inclusion economics: at gram-scale inclusion, taste and colour become dominant well before spirulina contributes meaningfully to a protein total. It is usually a positioning ingredient in a protein blend rather than the protein source itself. Be honest about that in the formulation brief.
Tablets and Capsules
- Grade: spirulina powder, or pressed tablets/granules.
- Advantage: bypasses taste entirely — which is why so much spirulina is sold in tablet form.
- Watch: the marine odour is still present on opening a bottle. Packaging choice matters for the consumer's first impression.
Two Claims to Handle Carefully
- Vitamin B12. Widely claimed and genuinely contested — much of the B12 measured in spirulina is regarded as a pseudovitamin analogue rather than a bioavailable form. Vegan consumers may be relying on this claim, which raises the stakes. Take specific advice; we do not position spirulina as a B12 source.
- Colour applications sit under different rules. Using phycocyanin as a food colour engages food-colour regulation — permitted uses, maximum levels and labelling vary by market and food category, and a supplement clearance does not carry across. Confirm the position per market before launch.
Handling and Storage
- 24-month shelf life, shorter than our botanical extracts by design — phycocyanin degrades with time, heat and light.
- For colour grades, storage is part of the specification. Cool, dark, sealed; re-test colour value on long-held stock.
- The marine odour transfers in a shared warehouse. Store away from odour-sensitive materials.
