Most botanical buyer's guides start with grade selection as a matter of potency. Licorice is different: the three commercial grades are not stronger and weaker versions of each other, they are opposite specifications for the same marker. A DGL grade caps glycyrrhizin at 2%; a standardised grade requires at least 20%. Order the wrong one and you do not get a suboptimal material, you get an unusable one. What Is Licorice Extract?
Licorice extract is a concentrated preparation made from the root and stolon of Glycyrrhiza glabra L., a legume of the Fabaceae family. In Ayurveda it is yashtimadhu or mulethi; in European and Chinese traditions it is equally long-established, and it appears in more pharmacopoeial monographs than almost any other root.
The name is literal. Glykys rhiza is Greek for "sweet root", and the sweetness is glycyrrhizin — a triterpene saponin roughly fifty times sweeter than sucrose. Glycyrrhizin is simultaneously the marker compound, the sensory signature, and the reason licorice carries a regulatory profile most botanicals do not.
The Three Grade Families — Get This Right First
This is the section that matters most. "Licorice extract" describes three commercially distinct materials:

Note that the first two rows carry inverted specifications for the same compound. A buyer who writes "licorice extract, glycyrrhizin specification per attached" and attaches a DGL sheet to a supplier quoting standardised material has created a contradiction that someone will resolve badly.
Buyer tip: name the grade family explicitly in the first line of your enquiry — "DGL grade, glycyrrhizin NMT 2%" or "standardised grade, glycyrrhizin NLT 20% by HPLC". Do not rely on the phrase "licorice extract" plus a price to communicate which of three materials you want. The glabridin grade in particular is a different price bracket entirely, and quoting it against a standardised specification produces a number that looks like a mistake because it is.
The Glycyrrhizin Ceiling: Why Licorice Needs Extra Arithmetic
Licorice is one of the few botanicals with a broadly recognised intake ceiling. Sustained high glycyrrhizin intake is associated with pseudoaldosteronism — potassium loss, sodium and water retention, and raised blood pressure — and international scientific opinion has converged on roughly 100 mg of glycyrrhizin per day as a level below which adverse effects are not expected in most healthy adults.
Two practical consequences for a buyer:
- Your dose arithmetic runs on the assayed percentage, not the grade name. A "20% grade" that assays at 24% delivers 20% more glycyrrhizin per serving than you planned. For a marker with a ceiling, that direction of variance is the one that matters. Insist the CoA states the measured figure, not the nominal grade.
- Several markets require an advisory statement above defined thresholds in confectionery and beverages, warning that people with hypertension should avoid excessive consumption. Whether you cross that threshold is a calculation on your finished product, and it needs a real ingredient number as its input.
This is precisely why DGL exists. If your format needs a meaningful daily dose of licorice's flavonoid fraction, removing the glycyrrhizin removes the ceiling — that is the whole commercial logic of the grade.
Species Matters More Here Than for Most Roots
Three Glycyrrhiza species are pharmacopoeially recognised in different parts of the world:
- G. glabra — the European and Indian species, and the source of glabridin.
- G. uralensis — Chinese licorice, gan cao, the species in most TCM contexts.
- G. inflata — also recognised in Chinese pharmacopoeial use.
All three contain glycyrrhizin, so a glycyrrhizin assay alone cannot distinguish them. That is an unusual and important gap: on most botanicals the marker assay doubles as a species check, and here it does not. The flavonoid profile does distinguish them — glabridin is characteristic of G. glabra — which is why a species declaration plus a TLC identity matters, and why a cosmetic buyer specifically cannot treat the species as interchangeable. Licorice is a deep-rooted perennial, which makes the heavy-metal block worth particular scrutiny — the plant draws from a larger soil volume over more seasons than an annual crop. Acid-insoluble ash matters for the same reason, catching soil carry-over as well as mineral bulking.
A Handling Note Buyers Underestimate
The standard glycyrrhizin-standardised grade is markedly hygroscopic — it is a saponin- and sugar-rich water-soluble powder, and it will pick up moisture from humid air and cake. This is the most common practical complaint with the material and it is entirely preventable: keep containers tightly sealed, re-seal promptly after part-use, and do not store opened drums in an uncontrolled warehouse through a monsoon or a humid summer. Caked material is usually still on specification, but it is a nuisance in a dosing line.
