Ginger is the easiest botanical in the world to buy and one of the harder ones to buy well. It is a commodity — high volume, thin margins, hundreds of sellers — and that combination is exactly what produces quiet dilution, vague extract ratios sold as standardised grades, and assays that pass on paper while the material underperforms in a formulation. What Is Ginger Extract?
Ginger extract is a concentrated preparation made from the rhizome of Zingiber officinale Roscoe, a member of the Zingiberaceae family alongside turmeric and cardamom. Note the word rhizome: ginger is traded universally as "ginger root", but the part used is an underground stem, and a supplier who writes "root" on a specification without qualifying it is telling you something about how carefully the document was written.
The functional identity of ginger sits in a family of pungent phenolic ketones. The gingerols — 6-gingerol dominant, with 8- and 10-gingerol alongside — define fresh ginger. The shogaols are their dehydration products, formed when the rhizome is dried or the extract is heated. Both are real ginger constituents; the balance between them is a processing signature, not a quality grade in itself.
How to Specify Grade: Four Commercial Families
"Ginger extract" spans four genuinely different materials, and the most common sourcing error is not stating which one you want:
- Standardised extract — assayed to total gingerols not less than 5% by HPLC, the mainstream commercial grade for supplements. A 10% grade exists for low-dose formats and softgels.
- Full-spectrum (native) extract — a native 4:1 / 10:1 ratio preserving the whole rhizome profile, positioned for traditional and Ayurvedic formats. Defined by extract ratio, not by a marker percentage.
- Oleoresin — a viscous liquid carrying both the pungent principles and the volatile oil, declared on pungency and volatile-oil content. This is the flavour-industry material, not the supplement material.
- Cold-water-soluble spray-dried grade — for shots, RTD beverages, teas and drink mixes where a partially soluble powder would sediment.
These four command different prices and behave completely differently in a formulation. Decide before you request a quote — a supplier quoting "ginger extract, $X/kg" without naming the family is quoting nothing.
Buyer tip: A 10:1 native ratio is not a stronger version of a 5% gingerol extract — it is a different specification basis entirely, and a 10:1 can easily assay below 5% total gingerols. If you need a defined-active claim, insist the gingerol percentage and the method (HPLC) appear on the CoA itself, not in a sales email. The Question Most Buyers Never Ask
Here is the variable that separates a careful ginger buyer from a careless one: what is the gingerol-to-shogaol ratio?
Because shogaols form from gingerols under heat, an extract processed at high temperature will show depleted gingerols and elevated shogaols. If you specify only "total gingerols NLT 5%", an over-processed batch simply fails assay and gets rejected — fine. But the reverse also happens: a supplier under pressure to hit 5% may standardise a heat-damaged extract up with a gingerol-rich fraction, producing a material that meets your number with a profile nothing like fresh rhizome.
Ask for the 6-gingerol and 6-shogaol figures reported separately on the CoA, not just the total. It costs the supplier nothing if they are running a proper HPLC method, and a refusal is informative.
