Fennel looks like an easy purchase: an ancient seed spice, grown at enormous scale, with a familiar sweet flavour. The catch is that its extract is defined by a volatile fraction — one that evaporates, oxidises, and can be cheaply imitated with anethole from entirely different sources. Buying fennel extract well means specifying two numbers instead of one, knowing which chemotype you are buying, and reading the GC lines on the CoA rather than just the headline. What Is Fennel Seed Extract?
Fennel seed extract is a concentrated preparation made from the seed of Foeniculum vulgare Mill., a member of the Apiaceae — the same family as cumin, coriander, anise and caraway. Note the word seed: what the trade calls fennel seed is botanically the plant's dried fruit, a schizocarp that splits into two mericarps, and a supplier whose documentation handles that detail correctly is telling you something about the rest of the paperwork.
The functional identity of fennel sits in its volatile oil, dominated by trans-anethole — the sweet, anise-like phenylpropanoid — accompanied by fenchone, a bitter camphoraceous ketone, and minor constituents including estragole. A finished extract typically carries a volatile-oil fraction of a few percent, and everything commercially interesting about the material lives inside that fraction.
The Two-Number Specification
The most common fennel specification error is writing one number where two are needed. "Anethole 60–80%" alone is ambiguous: 60–80% of what? A powder that was 60% anethole by weight would be halfway to being an essential oil. The correct reading — and the one to write into your specification — is:
- Volatile-oil content: 2–6% v/w — how much aromatic fraction the extract carries, measured by distillation.
- trans-Anethole: 60–80% of the volatile fraction — what that fraction is made of, measured by GC.
Fix both and you have defined the material. Fix only the anethole percentage and a supplier can meet it with an extract carrying almost no volatile oil at all; fix only the oil content and the fraction could be fenchone-heavy bitter fennel or worse. Sweet or Bitter Fennel — Know Which You Are Buying
Commercial fennel splits into two chemotypes with separate pharmacopoeial identities. Sweet fennel runs high in trans-anethole and low in fenchone; bitter fennel carries markedly more fenchone, which brings a camphoraceous, bitter edge. For supplement, tea and oral-care work, the sweet profile is almost always what a formulator wants — and Indian fennel is prized precisely for its sweet, anethole-rich character.
Buyer tip: do not specify the chemotype by name alone — specify the chemistry that defines it. "trans-Anethole NLT 60% of volatile fraction, fenchone reported per batch, by GC" makes the sweet profile verifiable on the CoA. A supplier who cannot report fenchone cannot demonstrate which fennel they sold you.
The Commercial Grade Families
"Fennel seed extract" spans several genuinely different materials:
