Why Fennel Is a Target

Botanical adulteration follows economics. It appears where the raw material has real cost, the extract is bought on a single number, and the buyer's testing is shallower than the seller's chemistry. Fennel checks all three boxes — with a fourth, peculiar to volatile-defined materials: the marker compound, anethole, exists as a cheap article of commerce entirely independent of fennel. Synthetic anethole and star-anise anethole are traded in bulk for the flavour industry, which means a fennel assay can be "passed" without any fennel being involved.

The result is rarely a fake product. It is a real fennel extract that has been stretched, or a genuine assay figure delivered by the wrong molecule's relatives.

Route 1 — Spent Seed from Oil Distillation

Fennel essential oil is a substantial trade in its own right, and distillation leaves behind spent seed: dried, milled, it looks and even faintly smells like fennel, because traces of oil cling to it — but the volatile fraction is gone. Blended into good material, it dilutes the aromatic actives proportionally while passing visual and organoleptic inspection.

What catches it: volatile-oil content by distillation. Spent-seed dilution drags the oil figure down directly, which is one more reason the two-number specification matters — an "anethole 60–80%" clause alone never sees it, because the little oil that remains can still be anethole-rich.

Route 2 — Synthetic Anethole Spiking

The economically elegant route. If a buyer's specification says only "anethole NLT 60%", the assay can be lifted with commercial anethole — synthesised, or isomerised from estragole feedstocks. The material passes the stated test while containing less real fennel than declared.

What catches it: the trans:cis ratio. Genuine fennel volatile oil is overwhelmingly trans-anethole with only trace cis; synthetic and isomerised anethole routinely carries an elevated cis fraction. On a GC trace the cis peak resolves cleanly, and an abnormal ratio is close to a confession. Isotope-ratio analysis can settle a dispute definitively, but for routine QC the isomer split does the work.

Specification language that works: "trans-Anethole NLT 60% of the volatile fraction by GC; cis-anethole and fenchone reported per batch; volatile oil 2–6% v/w by distillation. Carriers and excipients, if any, declared by name and percentage on the Certificate of Analysis." Four clauses, and every route on this page now has to defeat at least one of them.

Route 3 — Star-Anise and Cross-Botanical Anethole

Star anise (Illicium verum) oil is the flavour industry's cheapest natural anethole source, and it is predominantly trans — so the isomer test alone does not catch it. What does is the rest of the pattern: fenchone. Genuine fennel volatile oil carries fenchone; star-anise-derived anethole carries none. An extract labelled fennel whose GC trace shows a beautiful anethole peak and a missing fenchone peak is telling you where the anethole really came from. Anise (Pimpinella anisum) substitution reads similarly — right family, wrong seed, wrong minor-constituent pattern.

What catches it: full GC profiling against a genuine-fennel reference pattern, plus TLC identity, plus a seed-only, correct-species declaration on the CoA.

Route 4 — Undeclared Carriers and Bulking

Maltodextrin, starch and dextrose are legitimate excipients when declared — a spray-dried water-soluble grade genuinely needs a carrier. The adulteration is the undeclared version, used to make up weight in a material sold as pure extract. The tells are an oddly pale colour, high loss on drying, or a bulk density that does not match reference material.

What catches it: total ash and acid-insoluble ash limits for mineral bulking; a declared-carrier line on the CoA; and specifying the extract on a dry, carrier-free basis, which forces the arithmetic into the open.

Route 5 — Chemotype and Ratio Mislabelling

Often not dishonest, just sloppy — and common. Bitter-profile fennel sold into a sweet-profile specification, where the elevated fenchone flattens the sensory result; or a native 10:1 ratio extract shipped against a specification written for the standardised grade, on the logic that 10:1 "sounds stronger". What catches it: requiring the fenchone figure, and refusing to accept a ratio as a substitute for the two-number specification.

Practical Steps for a Buyer

  1. Specify both numbers with methods. Volatile oil by distillation, trans-anethole by GC. The single highest-value sentence in a fennel specification.
  2. Ask for the isomer split and fenchone. Free if the supplier runs a real GC method; revealing if they resist.
  3. Require carriers declared by name and percentage. Converts an omission into a falsification.
  4. Set acid-insoluble ash at NMT 2%. The cheapest anti-bulking control there is.
  5. Third-party verify the first batch. Nominate Eurofins, SGS or Intertek for pre-shipment testing on a new supplier, GC profile included.
  6. Re-qualify periodically. Supply chains drift, and anethole economics shift with the star-anise harvest.
