Why Cumin Is a Target

Botanical adulteration follows economics. It appears where the raw material has real cost, the finished extract is bought on a single number, and the buyer's testing is shallower than the seller's chemistry. Cumin checks every box — and adds a twist most botanicals lack: its marker, cuminaldehyde, is cheap to synthesise. That changes the adulteration landscape, because the most sophisticated shortcut in most botanicals (spiking) is in cumin one of the most accessible.

The result is rarely a fake product. It is a real cumin extract that has been stretched, or a number that has been helped.

Route 1 — Spent Seed Meal and Exhausted Marc

After extraction, the residual seed meal still looks, smells and tastes like cumin, because traces of volatile oil cling to it. Dried, milled and blended back into good extract, it passes organoleptic inspection while diluting the actives proportionally.

What catches it: a straightforward GC assay — the cuminaldehyde simply is not there at specification. The crudest route and the easiest to detect, which is why it is usually paired with route 4.

Route 2 — Undeclared Carriers and Bulking Agents

Maltodextrin, rice flour and starch are legitimate excipients when declared. The adulteration is the undeclared version, where carrier makes up weight in a product sold as pure extract. Tell-tale signs are an oddly pale colour against the reference light-tan-to-brownish material, a bulk density that does not match, and an assay that sits suspiciously exactly at the specification minimum.

What catches it: total ash and acid-insoluble ash limits for mineral bulking; a declared carrier line on the CoA; and a specification written on a dry, carrier-free basis, which forces the arithmetic into the open.

Specification language that works: "Cuminaldehyde 25–35% w/w by GC, on dry basis. Carriers and excipients, if any, to be declared by name and percentage on the Certificate of Analysis." A supplier using an undeclared carrier now has to either disclose it or falsify a document — a materially different decision.

Route 3 — Extract-Ratio Mislabelling

Often not dishonest, just sloppy — and common. A native 10:1 extract gets sold into a specification written for the standardised grade, on the reasoning that 10:1 "sounds concentrated". As covered in our standardisation guide, a ratio says nothing about marker content: a 10:1 cumin extract's cuminaldehyde follows the raw material and can sit far below the standardised band.

What catches it: requiring an assay figure with a method, and refusing to accept a ratio as a substitute for one.

Route 4 — Synthetic Cuminaldehyde Spiking

The cumin-specific hazard. Cuminaldehyde is manufactured synthetically at commodity prices for the flavour and fragrance industry, which means a seller can lift a failing assay by adding the pure compound. The material then passes GC assay — the number is real — while containing less genuine seed extract than declared.

What catches it: the volatile profile, full stop. Genuine cumin seed extract shows cuminaldehyde in natural proportion to p-cymene, γ-terpinene, β-pinene and the menthadienals — the biosynthetic family the seed cannot help producing together. Spiked material shows an elevated cuminaldehyde peak with companions missing or out of proportion, a pattern no real seed produces. This is why our CoA reports the profile, not just the number, on request: on this botanical the companion peaks are the assay's integrity check.

Route 5 — Species and Part Substitution

The naming chaos around cumin makes species substitution unusually easy to launder. Caraway (Carum carvi) and Bunium species ("shahi jeera") are visually similar as milled seed and cheaper in some seasons; Nigella sativa trades under the "black cumin" name to buyers who did not specify a binomial. Separately, stem and chaff can be milled in with seed to add weight.

What catches it: a TLC identity that must correspond to reference cuminaldehyde, the GC profile again — caraway's volatile fraction is carvone-dominated and looks nothing like cumin's on a trace — and a seed-only, correct-species declaration on the CoA. Where a buyer needs a higher evidentiary standard, DNA barcoding of incoming raw material can be arranged, though it is of limited use on a finished extract.

Practical Steps for a Buyer

  1. Specify the binomial and the seed. "Cuminum cyminum L., seed" closes the species door before it opens.
  2. Specify GC by name and ask for the profile. The single highest-value request on this botanical — free if the supplier runs a real method, revealing if they resist.
  3. Require carriers declared by name and percentage. Converts an omission into a falsification.
  4. Set acid-insoluble ash at NMT 2%. The cheapest anti-bulking control there is.
  5. Third-party verify the first batch. Nominate Eurofins, SGS or Intertek for pre-shipment testing on a new supplier. One independent report at the start of a relationship is worth more than a year of supplier CoAs.
  6. Re-qualify periodically. Cumin sourcing shifts with harvests and prices; a supplier who was clean two seasons ago may be buying differently now.
