Most spice specifications are a single number with a method attached. Cardamom does not work that way. Its aroma is a balance between two compounds, and a material can hit every headline figure on your specification while smelling wrong — because the number you specified was never the one that mattered.
Two Compounds, One Balance
Cardamom's aroma is dominated by two constituents that pull in different directions:

Cardamom smells like cardamom because of the balance between them. A volatile oil figure cannot capture that — two materials with identical volatile content can smell quite different, and one of them will be wrong for your product.
Why a Total Figure Misleads
Volatile oil content tells you how much aroma material is present. It says nothing about which aroma.
On a spice like cumin, where one compound dominates, the total is a decent proxy. On cardamom it is not, because the two leading constituents produce genuinely different sensory outcomes. A high-volatile material weighted toward cineole will be powerfully eucalyptus-like — strong, and wrong.
Write the Ratio Into the Specification
For flavour-led applications — premium bakery, beverages, confectionery, fine fragrance — specify:
- 1,8-cineole, by GC;
- α-terpinyl acetate, by GC;
- The ratio between them, reported;
- Volatile oil, as the strength figure;
- The species — see below.
For applications where cardamom is a background note in a complex blend, the total figure is usually sufficient and the ratio matters less. The question is how exposed your product is to the character of this one ingredient.
Green Is Not Black

They are not interchangeable in any application. A specification saying only "cardamom" has not distinguished them, and the price gap makes that a substitution worth guarding against explicitly.
Handle It Like a Fragile Aromatic
Cardamom is among the more delicate spice aromatics. The light top notes go first, which means a poorly stored material can meet its volatile oil specification while having lost precisely the floral lift that justified its price.
- Store cool, dark, tightly closed, below 25°C;
- Reseal promptly — headspace losses are real on this material;
- Where processing involves heat, dose against the finished product rather than the incoming sample;
- Assess samples by smell as well as certificate. On this ingredient the nose catches things the assay does not.
Why Oleoresin Rather Than Ground Pod
On an expensive spice the economics usually favour the extract. Ground cardamom loses aroma quickly, varies substantially batch to batch and disperses unevenly. An oleoresin carries far more aroma per kilo, holds a specified profile and distributes uniformly — frequently a lower total cost per unit of delivered flavour despite the higher price per kilogram.
Where visible seed is part of the product, whole pods and decorticated seed remain the right choice.
