What Black Pepper Oil Is β and Is Not
Black pepper oil is the steam-distilled volatile fraction of the dried unripe berries of Piper nigrum L. During distillation, steam carries the aromatic terpenes out of the peppercorn and into a condenser; the oil separates from the water and is drawn off. No extraction solvent touches the material.
What stays behind is just as important as what comes over. How to Specify the Oil
A serious black pepper oil specification is built on physical constants plus a chromatogram, because these are the parameters an adulterated oil struggles to fake simultaneously:
- Optical rotation at 25°C: β1.0° to β23.0°. Pepper oil is levorotatory. Optical rotation is a chirality measurement β it reads the handedness of the terpene molecules β and cheap synthetic or off-species terpenes rarely match the natural enantiomer balance.
- Refractive index at 25°C: 1.479 β 1.488. A tight window that shifts if the oil is cut with carriers or high-RI aromatics.
- Specific gravity at 25°C: 0.8640 β 0.8840. Terpene hydrocarbons are light; dilution with fixed oils or solvents moves density out of the window.
- Identity by GC β the peak pattern must correspond to the characteristic pepper profile: β-caryophyllene dominant, with limonene, pinenes, sabinene and δ-3-carene in natural proportions.
