Mace and nutmeg come from the same fruit and are routinely treated as near-relatives. They are not interchangeable — and the price gap between them creates a substitution risk that powder conceals completely.
One Fruit, Two Spices
The fruit of Myristica fragrans yields both. Inside sits the seed, dried to become nutmeg. Wrapped around it is a bright red, lacy membrane — the aril — which is peeled away, flattened and dried to become mace.
They share a botanical source and diverge from there.

Swapping one for the other at equal weight does not give a stronger or weaker version of the same flavour. Where a charcuterie or biryani formulation calls for both, they are doing different jobs and the ratio is deliberate.
Colour Is a Freshness Signal
Mace grades on colour, and it is worth understanding what the colour is actually telling you. The bright orange-red of a Grade 1 blade comes from carotenoid pigments, and those degrade with age, heat and light.
So a pale yellow blade is usually reporting on drying and storage rather than on the tree it came from — and the volatile oil ladder tracks the colour ladder closely: 12% on bright Grade 1, 10% on paler Grade 2, 8% on broken material.
Colour is one of the few quality parameters you can assess before the analysis arrives. On mace it is worth using.
Bombay Mace: The Substitution
Wherever a price gap of this size exists, a cheaper look-alike follows it into the market. On mace that look-alike has a name.
Bombay mace is the aril of Myristica malabarica — a different species. It is materially cheaper and aromatically much weaker than true mace.
The practical position is worth stating precisely, because it determines what you should buy:
- In whole blades, the two are distinguishable. True mace is broader, lacier and more orange-red; Bombay mace is narrower, flatter and duller. An experienced grader separates them by eye.
- In powder, the distinction effectively disappears. Colour can be matched, texture tells you nothing, and only analysis separates them.
That asymmetry is the whole practical lesson. Ground mace from an unverified source is a materially riskier purchase than whole blades from the same source — not because grinding is suspicious, but because it removes the evidence.
Where you need powder, make sure the species verification sits with a supplier who handled the whole material, rather than falling to you after delivery.
The Shared Aflatoxin Exposure
Mace shares the growing conditions, harvest handling and drying chain of nutmeg, and with them the same mycotoxin exposure. Nutmeg has a long record of EU border rejections on aflatoxin.
This is where a fair number of buyers leave a gap: a tight mycotoxin specification is applied to the nutmeg line and mace is treated as an afterthought, despite coming out of the same orchard and the same drying yard. If your programme controls one, it should control both, and on the same per-lot basis.

- Volatile oil declared per lot, against the grade claimed;
- Colour grade stated, with the understanding that it indexes freshness;
- Aflatoxin tested per lot, not per contract;
- Raw-material origin stated — Indonesia, Sri Lanka and Grenada dominate world supply;
- Pesticide residues, heavy metals and microbiology to your market's limits.
