One Seed Coat, Two Pigments

Annatto comes from the waxy red seed coat of Bixa orellana — the aril wrapping the seed, not the seed itself. Commercially it reaches you as one of two related compounds:

They are chemically close and functionally not interchangeable. Bixin will not disperse in an aqueous system. Norbixin will not carry properly into a fat phase.

The failure mode is characteristic: the colour specks, separates or simply underdelivers, and it is discovered in a pilot batch rather than on paper. Settling the question at specification costs nothing.

Why the EU Split E160b

Following the re-evaluation of annatto colours, the single E160b entry was divided into E160b(i) bixin and E160b(ii) norbixin, each carrying its own specification and its own acceptable daily intake.

For a buyer that has three practical consequences:

  1. Functionality — the form determines whether the colour works in your matrix at all;
  2. Labelling — the two are not the same entry, and a certificate that says only "E160b" has not told you which specification the material meets;
  3. Usage levels — permitted levels and intake assessment run against the specific form, so the arithmetic differs.

Ask for the designation explicitly. A supplier who cannot state it is telling you something about their documentation.

Specify Colour Strength, Not Just Percentage

Bixin content — typically 2 to 5%, or 5 to 10% on concentrated grades — tells you what is in the drum. Colour strength tells you how much to dose to hit your target shade, and it is the figure formulators actually work against.

Two materials at the same nominal percentage can behave differently in the same matrix. Where a specification lists percentage alone, ask for strength as well, declared per batch.

Light Is Not a Formality

Annatto is genuinely light-sensitive. Every grade ships in light-protected packaging and stores cool and dark below 20°C, and that is a handling instruction rather than a shelf-life disclaimer.

In practice: keep drums closed and shaded in the warehouse, and do not decant into clear intermediate containers. Poor light handling is the most common reason an annatto batch underperforms against its declared strength — and it is usually blamed on the material rather than on the storage.

It matters in the finished product too. A clear bottle on a lit retail shelf is a demanding environment for any natural colour, and that is worth discussing alongside packaging rather than after launch.

Annatto Is an Additive, Not a Colouring Foodstuff

This one catches clean-label programmes out. Annatto extract is an authorised food colour additive, declared by E number or by name and function on the ingredient list.

The colouring foodstuff route — concentrates of fruit, vegetable or other edible material used for their colouring properties and declared as ingredients — is a different category with different labelling consequences. Natural origin alone does not qualify a colour for it.

Annatto's advantages are real: a warm orange-yellow that few natural colours match, good stability in fats, centuries of use, and organic grades available. But the declaration is that of an additive, and that is far easier to plan for than to correct after artwork is printed.

What to Require

  1. E160b(i) or E160b(ii) stated — not just "E160b";
  2. Bixin or norbixin content, standardised;
  3. Colour strength declared per batch — your dosing basis;
  4. Carrier named with inclusion level;
  5. Solvent named, residual level by GC;
  6. Heavy metals, microbiology, and organic or Kosher/Halal certification where required.
